Who says grilled cheese is just for kids?
This past Saturday was National Grilled Cheese Day and how could we not commemorate such a great holiday? We took one of our favorite snacks - a Caprese stack with fresh mozzarella, tomato, and basil - and transformed it into an even more delicious treat.
Melted mozzarella along with slices of juicy tomato and sweet basil leaves puts a sophisticated spin on the classic grilled sandwich. This recipe calls for a drizzle of Traditional Balsamic Vinegar and Milanese Gremolata Olive Oil, but could certainly be changed to include some of your other favorite flavor combinations. Other pairings to complement this dish are Vermont Maple Balsamic & Garlic Olive Oil and Fig Balsamic & Basil Olive Oil.
You may notice a typical ingredient left off the list in this recipe: butter. Swap olive oil in place of butter and you’ll feel better about indulging in this cheesy treat. Simply drizzle oil on one side of each slide of bread where you would normally add butter.
This recipe is quick and easy to prepare. Whether you’re making lunch or dinner for one or the whole family, it’s definitely a crowd pleaser. Entertaining? Cut your sandwiches into quarters and all your guests can enjoy. For a fun breakfast option, fry an egg and add it when adding the other toppings.
Caprese Grilled Cheese
makes 1 sandwich
2 slices bread
3 slices tomato
3-4 large fresh basil leaves
3 slices of fresh mozzarella
1. Drizzle olive oil on one side of each slice of bread.
2. Arrange mozzarella slices on non-oiled side of bread. Place in skillet on medium heat. Cover with a lid and allow cheese to melt.
3. Add tomato slices and basil to bread. Drizzle with Traditional Balsamic. Arrange other slice of bread on slice of bread with toppings.
