Roasted Asparagus with Lemon Balsamic 

 

A squeeze of lemon can transform an ordinary side dish into an instant citrusy, fresh favorite. Using our Sicilian Lemon White Balsamic Vinegar in a similar manner contributes an equally pleasing citrus zip! 

 

The flavor of Sicilian Lemon Balsamic lends itself well to use with green vegetables like asparagus, broccoli, and kale. This recipe is for a simple roasted asparagus - ideal for any night of the week. After removing ends of asparagus, soak spears in a cup with Lemon Balsamic to allow flavor to soak in before roasting. Cover asparagus with of extra virgin olive oil - even on all sides - then season with salt and pepper and bake for 8-10 minutes. You’ll know the asparagus are done roasting when they become lightly browned and tender. Finish with a drizzle of the Sicilian Lemon Balsamic. This recipe can also be adapted for grilled asparagus.

Roasted Asparagus with Lemon Balsamic

 

Ingredients: 

1 lb asparagus spears

2 Tablespoons Saratoga Olive Oil Co. California Arbequina Extra Virgin Olive Oil (or your favorite varietal)

2 1/2 Tablespoons Saratoga Olive Oil Co. Sicilian Lemon White Balsamic Vinegar, divided

Sicilian Sea Salt

Black pepper

 

Process:

1. Preheat oven to 400 degrees. 

2. Cut ends off asparagus. Pour 1 1/2 Tablespoon of Sicilian Lemon balsamic into a cup and allow ends of spears to soak, absorbing some of the balsamic. 

3. Arrange spears on baking sheet and evenly coat the spears with extra virgin olive oil. Season with salt and pepper.

4. Bake for 8-10 minutes until lightly browned. Drizzle with remaining balsamic vinegar.
