Homemade Olive Oil Bagels

I'm sure you've enjoyed the tastiness of a Rosemary & Olive Oil bagel at your local bagel shop. The herby flavor coupled with the chewy texture of a perfectly baked bagel is hard to resist. We thought it would be fun to take a bakery favorite and bring it inside the home kitchen using our Organic Tuscan Herb infused olive oil. Tuscan Herb was selected for this recipe because its blend of rosemary, garlic, basil, and oregano emulates a standard rosemary & olive oil bagel nicely, but also adds a distinct flare. Any infused oil could be substituted into this recipe depending on your taste preferences. A spicy oil, like Harissa or Green Chili, would add a nice kick, too.

Tuscan Herb Olive Oil Bagels

1 Tablespoon active dry yeast
2 1/2 tablespoons sugar
1 cup skim milk, warm
2 Tablespoons Organic Tuscan Herb Olive Oil
2 teaspoons coarse salt
2 eggs
3 3/4 cups all purpose flour
1 egg white

1. Combine yeast and 1 Tablespoon sugar in medium mixing bowl. Add 1/2 cup of milk to mixture. Allow mixture to stand, providing yeast a chance to dissolve into the milk.

2. Add olive oil, salt, and eggs to mixture and beat thoroughly. Stir in 3.5 cups of flour. The dough should become firm. (If you're using a standing mixer, use the dough hook for this step.) Turn the dough until it is smooth and bouncy.
3. Let dough rise in a covered, lightly oiled bowl for approximately 40 minutes.
4. Divide the dough into 12 equally sized (approx. 4 oz) pieces. Shape dough into a rounnd, then flatten it. Push down in the center of the dough with index finger (use flour on your hands) to create a hole. To stretch the center, gently pull the edges and even out the dough. Allow shaped dough to sit, covered, for 20 minutes.
5. Combine 1/2 tablespoons of sugar with 3 quarts of water in a large pot and bring to a boil.
6. Bring water to a simmer and drop in dough circles, 3 at a time. Let sit on each side for 3 minutes. Remove from water with a slotted spatula.
7. Brush egg whites on top of bagels.
8. Bake at 375 degrees for 30 minutes.
