What is White Balsamic Vinegar?

White Balsamic Vinegar is a lighter balsamic compared to dark balsamic vinegar and is usually pressure cooked to keep it from browning before it is aged. This helps give white balsamic its clear golden color. Our white balsamics are less complex and have not been caramelized as the dark balsamics have been, resulting in a lighter, cleaner flavor.

How to Make White Balsamic Vinegar

White Balsamic Vinegar is made by blending white grape must with 100% Italian barrel aged white wine vinegar, both made from Albana, Trebbiano and Montuni grapes which grow exclusively in the region of Modena, Italy. The traditionally cooked grape must is then lightly filtered to remove any skins from the cooked must and is placed into new white oak barrels for aging. The white balsamic is less complex and has not been caramelized over an open wood fire in copper kettles, as the dark balsamic has been.

Is White Balsamic Vinegar the Same as White Vinegar?

While both are made from grapes, white balsamic usually has a sweeter flavor compared to white wine vinegar which tends to be more tart and sour in flavor. Still, these can be used mostly interchangeably, depending on the recipe and flavors you're looking for.

How long does White Balsamic Vinegar last? Can White Balsamic Vinegar go bad?

Balsamic vinegar lasts forever. Since it is fermented, it has already “gone bad!” However, we recommend consuming your balsamics within 5 years for the best flavor profile.

What is the difference between White Balsamic Vinegar and Dark Balsamic Vinegar?

Both our white and dark balsamics are produced from the same grape (surprise!), the white Trebbiano variety. The difference lies in the production method. Our dark balsamic is created by slowly cooking the grape juice in copper kettles over an open wood fire. The rich, sweet flavor comes when the cooked grape juice (also known as “must”) becomes caramelized. The grape must is then aged in wooden casks stored in attics for fermentation while incorporating the Solera method. With the Solera method, as a portion of the vinegar evaporates, each barrel is topped off with younger vinegar from the previous barrel so each year the new must is blended with the one from the previous year. The result of this aging process, which takes up to 18 years, is a delicious, complex, all-natural balsamic vinegar with no added sugar, thickening agents, or caramel coloring. 100% pure and 100% delicious!
