Here is a delightful Italian olive being cultivated under the Spanish sun. This Frantoio has notes of dried thyme and citrus on the nose. The palate is all herbs and spicy greens, with a nutty walnut astringency. The finish has a curious, intensifying tingle. Try this extra virgin with roasted sweet root vegetables or sweet winter squash and a pinch of our French Provencal sea salt.
