Cheese Ravioli with Walnuts

Cheese Ravioli with Walnuts, Roasted French Walnut Oil and Sicilian Sea Salt

Ingredients

  • 14-16 oz package cheese ravioli
  • ⅓ C SOOC Walnut Oil
  • 1 clove garlic
  • 1 c walnuts, roughly chopped
  • 2 t lemon juice
  • ½ C flat leaf parsley, chopped
  • ½ t SOOC Sicilian Sea Salt
  • ¼ t fresh ground pepper
  • ¼ C grated parmesan cheese

Directions

  • 1. Cook the ravioli according to the package directions. Drain & reserve 3 T of the cooking water.
  • 2. Heat the Walnut Oil in a skillet over medium-heat. Add the garlic & walnuts. Cook, stirring, until the nuts are lightly toasted & fragrant (about 5 minutes).
  • 3. Stir in lemon juice, parsley & reserved water. Season with salt & pepper.
  • 4. Add ravioli & toss to coat.
  • 5. Serve with a sprinkle of parmesan.
