Cinnamon Pear Balsamic Vinegar

Double Cinnamon Granola

This cinnamon-packed granola makes a great topping for yogurt or ice cream, try it with milk, or take it on a hike as a trail snack.

Ingredients

  • 1 C dried figs, cut into sixths
  • 1/4 C SOOC Cinnamon Pear Dark Balsamic
  • 3 C oats
  • 1/2 C sunflower seeds
  • 3/4 C quinoa
  • 1 and 1/4 tsp Saratoga Spicery Ceylon Cinnamon
  • 6 T Saratoga Tea and Honey Wildflower Honey
  • 1/4 C SOOC Mild Extra Virgin Olive Oil
  • 1 C walnuts, roughly chopped

Directions

  • 1. Soak the figs and balsamic vinegar for 15 minutes, until the figs have softened. Strain off the balsamic & reserve. Preheat the oven to 350 degrees.
  • 2. Combine the dry ingredients: oats, sunflower seeds, & quinoa.
  • 3. In a small saucepan add the balsamic, cinnamon & honey & heat until the honey is dissolved into the vinegar.
  • 4. Pour the vinegar & honey and the oil over the dry ingredients. Stir well.
  • 5. Spread on a lined baking sheet and bake for 15 minutes. Remove, stir in the figs and walnuts, and bake approx. 15 minutes more. The granola should be evenly golden brown.
  • 6. Allow the granola to cool & rest to clump and store in a glass container.

This granola is crunchy and satisfying without being overly sweet. It's delicious with milk, or on top of yogurt, ice cream, etc. Super easy to make and is a great hostess gift - just spoon some into a mason jar and tie a ribbon around it!
