Frisee Salad with a Maple Bacon Vinaigrette

Not your average salad - sure to be a party pleaser! This recipe uses the classic duo of maple & bacon to give it that little extra "something."

Ingredients

  • 7 c torn frisée leaves
  • 3 c endive, sliced
  • 1 c radicchio, sliced
  • 6 slices bacon
  • 1/4 c shallots, chopped
  • 4 T Maple Dark Balsamic
  • 4 T a varietal SOOC extra virgin olive oil
  • 1 t dijon mustard
  • 1/4 t French Fleur de Sel Sea Salt
  • 1/4 t fresh ground pepper
  • 3/4 c crumbled blue cheese

Directions

  • 1. Toss frisée, endive and radicchio in a large salad bowl.
  • 2. Cook bacon. Drain on paper towels, saving 1T of drippings. Sauté shallots in bacon drippings for 4 minutes.
  • 3. In a small bowl: whisk balsamic, mustard, olive oil, salt and pepper together to make dressing. Drizzle over salad, then add crumbled bacon and cheese. Serve.
