Smashed Baby Yukon Gold Potatoes with Garlic Olive Oil and French Fleur de Sel Sea Salt
Ingredients
2 lb Baby Yukon Gold Potatoes
2T Garlic Infused Olive Oil
1 1/2 T French Fleur de Sel Sea Salt
fresh cracked pepper, to taste
Directions
1. Preheat the oven to 400˚. Boil the potatoes in water and 1 T of sea salt for about 7 minutes or until they are tender but not mushy. Drain thoroughly.
2. Rub baking sheet with olive oil. Place potatoes on pan and gently crush each into a disk using a glass that has been greased in olive oil. Sprinkle smashed potatoes with remaining sea salt & pepper to taste. Drizzle with olive oil and bake until golden brown & crisp, about 15-20 minutes.
