Mixed Greens Salad with Honey Ginger Vinaigrette

A mixed greens salad using Honey Ginger Balsamic, a varietal Ultra Premium Extra Virgin Olive Oil and the Himalayan Pink Sea Salt.

Ingredients

  • 1/2 lb snow peas, trimmed
  • 6 c mixed salad greens
  • 4 scallions, thinly sliced
  • 2 small zucchinis, ribbon sliced with veggie peeler
  • 1/4 c torn basil leaves
  • 4 T Honey Ginger Balsamic
  • 6 T Spanish Picual Extra Virgin Olive Oil
  • 1 t fresh lemon juice
  • Himalayan Sea Salt, to taste
  • fresh grated pepper, to taste

Directions

  • 1. Blanch snow peas in boiling water for 3 mins. Toss into ice bath and then drain.
  • 2. Toss snow peas with greens, zucchini, scallions and basil.
  • 3. Whisk Honey Ginger Balsamic and the extra virgin olive oil with lemon juice, salt and pepper.
  • 4. Divide salad onto plates, dress each salad.
