Salsa Verde for Fish

This sauce is the perfect, bright and flavorful accompaniment to a grilled, roasted or seared fish! Also wonderful on vegetables or used to brighten grilled, poached or roasted meats.

Ingredients

  • 1/2 cup gherkin pickles
  • 1 garlic clove
  • 1/4 c capers
  • 2 anchovy filets
  • 1 bunch of parsley
  • 1 bunch of basil
  • 4 sprigs of plucked mint leaves
  • 4 T Sicilian Lemon Balsamic
  • 1/2 c plus 8 T Mild Extra Virgin Olive Oil
  • 1 t Sicilian Sea Salt

Directions

  • 1. Puree the gherkins, capers, garlic and anchovies in food processor.
  • 2. Add in the balsamic and ½ c mild extra virgin with the herbs. Season with salt. Puree until more oil is needed.
  • 3. Add in additional extra virgin until the sauce has a smooth, liquid consistency. Serve with grilled or roasted fish.
