Shaved Fennel Salad with Milanese Gremolata

Ingredients

  • 4 T SOOC Milanese Gremolata Infused Olive Oil
  • 2 T fresh lemon juice
  • 1 t SOOC French Citrus Fennel Sea Salt
  • fresh ground pepper, to taste
  • 2 T flat leaf parsley, finely chopped
  • 2 bulb fennel, trimmed and thinly sliced
  • 3 C mixed baby greens, washed
  • ⅓ C Pecorino Romano, finely shaved

Directions

  • 1. Thoroughly whisk together the olive oil, lemon juice, salt, pepper & parsley in a large bowl. Add the shaved fennel & toss to coat. Marinate in the refrigerator for 2 hours.
  • 2. To plate, arrange the shaved fennel over a bed of mixed baby greens. Pour any remaining dressing over the fennel & greens. Sprinkle with shaved Pecorino & fresh ground pepper.
