Sicilian Spinach Salad

Sicilian Spinach Salad, with a Basil Olive Oil and Sicilian Lemon Balsamic Vinaigrette.

Ingredients

• ½ C SOOC Basil Olive Oil
  
• ½ C SOOC Sicilian Lemon Balsamic Vinegar
  
• 2 T red onion, minced
  
• 3 T fresh basil leaves, torn
  
• 1 clove garlic, crushed and minced
  
• 6 C fresh spinach
  
• 3 oz goat cheese in pieces
  
• ⅓ C sun dried tomatoes, sliced thin
  
• 3 T pine nuts, toasted
  
• ¼ t SOOC Sicilian Sea Salt, to taste
  
• ¼ t fresh ground pepper, to taste
  

Directions

• 1. Combine dressing ingredients & whisk (Basil Olive Oil, Sicilian Lemon Balsamic, onion, basil, garlic, Sicilian Sea Salt & pepper).
• 2. Toss spinach with cheese, sun dried tomatoes & pine nuts.
• 3. Dress with vinaigrette & serve.
