Thanksgiving EVOO Turkey & Stuffing

With Thanksgiving right around the corner, we're here with helpful suggestions to take the stress out of holiday dinner preparations! Check out this recipe for a juicy, flavorful turkey (with delicious stuffing)!

Thanksgiving EVOO Turkey & Stuffing (serves 4-6)

Ingredients

For the turkey:

  • 1 whole turkey (about 8 1/2 lbs)
  • 1 cup plus 1 Tablespoon of SOOC Extra Virgin Olive Oil
  • 3 Tablespoons minced garlic
  • A pinch of chopped fresh rosemary
  • A pinch of chopped fresh basil
  • A pinch of dried oregano
  • A pinch of dried parsley
  • A pinch of onion powder
  • A pinch of dried thyme
  • A pinch of red pepper flakes
  • 1 teaspoon ground black pepper
  • SOOC Himalayan Pink Sea Salt, to taste

For the stuffing:

  • 3 cups crusty bread
  • 2 onions
  • 2 celery stalks
  • 1/3 cup fresh parsley
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • SOOC Himalayan Pink Sea Salt, to taste
  • Pepper, to taste
  • 2 eggs
  • 1/4 cup chicken broth

Preparation

For the stuffing:

  1. Cut the bread into small cubes, dice the onion & celery; chop the parsley.
  2. Bake the bread in the oven for several minutes until golden.
  3. Heat the SOOC EVOO in a pan; sauté the onion & celery until soft.
  4. Mix the onion & celery with the remaining ingredients in a large bowl.

For the turkey:

    1. Preheat the oven to 325ºF (165ºC).
    2. Mix the SOOC EVOO with the garlic, rosemary, basil, oregano, parsley, onion powder, thyme, red pepper flakes, black pepper & SOOC Himalayan Pink Sea Salt in a bowl. Set aside.
    3. Wash the turkey inside & out. Leave it to dry.
    4. Remove any large fat deposits & gently loosen the skin from the breast without tearing it (working your fingers into the area between the breast & skin).
    5. Place the stuffing inside the turkey cavity.
    6. Spread the SOOC EVOO & herb mixture over the outside of the turkey & between the breast & skin.
    7. Place the turkey in a roasting pan with a rack & put it in the oven. Add about half a cup of water to the bottom of the pan & leave the turkey to roast for 3-4 hours.
    8. Allow the turkey to cool slightly before serving. Enjoy!
