Shrimp and Pineapple Skewers

Metal Skewers vs. Wooden Skewers:

I prefer to use metal skewers which don’t need any soaking time however be cautious when handling them as they may become hot on the grill. 

If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill. Be sure not to overcrowd the skewers to ensure even cooking.

Products used: Baklouti Green Chili Olive Oil & Pineapple Balsamic, Baklouti Green Chili Olive Oil, Golden Pineapple Balsamic Vinegar

Ingredients

2 pounds large shrimp, peeled, deveined
6 tablespoons SOCC Baklouti Green Chili (more if needed)
4 tablespoons SOCC Golden Pineapple Balsamic Vinegar (more if needed)
2 tablespoons garlic, minced
Juice from 2 limes
Other Ideas: Add other seasonal vegetables such as red onion and/or red bell pepper chunks.

Directions

1. Marinade the shrimp in 6 tablespoons olive oil, 4 tablespoons balsamic vinegar, 2 tablespoons minced garlic and the juice from two limes. If you can marinade overnight or for at least 30-45 minutes before cooking in a large bowl or plastic bag.

2. While the chicken is marinating prepare your pineapple and preheat your grill to medium-high heat.

3. Thread the shrimp and pineapple chunks onto the skewers, alternating ingredients as desired.

4. Brush the skewers lightly with more olive oil and place on the grill. Cook for 2-3 minutes on each side, or until the shrimp are pink and the pineapple is lightly charred.

5. Remove the skewers from the grill and transfer them to a serving platter. Serve the skewers with a side of coconut rice or a fresh green salad topped with some avocado for a complete meal.
