Slammin' Salmon
Baked salmon is a quick, easy, and healthy dinner option. Lemon, dill, and garlic get a kick from a splash of our Suyo Cucumber Balsamic for a delicious dish you can feel good about.

Products used: Meyer Lemon Olive Oil, , Five Pepper Sea Salt

Ingredients

For salmon:
2 8 ounce salmon filets
1 tablespoon Meyer Lemon Olive Oil
1 pinch Five Pepper Sea Salt
2 tablespoons fresh dill, chopped (or substitute 1 teaspoon dried)
1 small lemon, thinly sliced into 1/8th-inch rounds
For garlic sauce:
¼ cup hummus
1 tablespoon lemon juice
1-2 tablespoons fresh dill, minced (or substitute 1-2 teaspoons dried dill)
2-3 cloves garlic, minced (reduce for less garlic flavor)
Water (to thin)

Directions

Preheat oven to 400º F. Line a baking sheet with parchment paper.

Briefly rinse salmon under cold water and pat dry with a paper towel.

Once dry, drizzle both filets with Meyer Lemon Olive Oil and season each with a pinch of Five Pepper Sea Salt. Sprinkle on dill and top with fresh lemon slices.

Transfer seasoned salmon directly to the parchment paper-lined baking sheet and bake for about 12-15 minutes, or until the center is fully cooked.

Prepare garlic sauce by adding hummus, lemon, dill, and garlic to a small mixing bowl and stir to combine. Slowly add water to desired thickness, until a pourable sauce is achieved.

After the salmon has come out of the oven and rested while completing the garlic sauce, remove the lemon slices, drizzle the garlic sauce, squeeze lemon, and enjoy!
