Ingredients

2 pounds of small yellow potatoes
4 – 6 tablespoons SOOC Bacon Olive Oil
2 tablespoons SOOC Bourbon Maple Balsamic Vinegar
Salt and pepper to taste
Fresh parsley or chives to garnish

Directions

Heat your oven to 400 degrees. Place the cleaned potatoes into a pot of boiling water until a fork can poke them easily.

Place the boiled potatoes in a bowl and cover with SOOC Bacon Olive Oil and SOOC Bourbon Maple Balsamic Vinegar. Toss to coat and add some salt and pepper.

Place the boiled potatoes on a parchment-lined baking sheet and use a fork or the bottom of a glass to gently “smash” each potato.

Drizzle more olive oil and extra balsamic over the smashed potatoes, ensuring they are well-coated and bake for 30 minutes. For extra crispiness, leave them in the oven a bit longer until the edges turn golden brown.

Garnish with fresh parsley or chives and serve hot.
