This wholesome dish combines the rich flavors of classic Chicken Parmesan with healthy twists, swapping out traditional pasta for nutrient-packed spaghetti squash and using grilled chicken and not fried to create a lighter yet equally delicious alternative. The result? A mouthwatering Spaghetti Squash Chicken Parm Bake that's bound to become a family favorite.

Products used: Garlic Olive Oil

Ingredients

2 medium spaghetti squash, halved lengthwise and seeds removed
6 tablespoons SOOC Garlic infused olive oil
4 medium chicken breasts (Can also use a roasted chicken here to save time!)
3 cups (or 1 24 oz. jar) marinara sauce
1 tablespoon dried oregano
1 tablespoon dried basil
3-5 cups mozzarella cheese, shredded
salt and pepper

Directions

1. Preheat your oven to 400 degrees.

2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, and coat with one tablespoon of olive oil. Sprinkle with salt and pepper and place the halves on a parchment lined baking sheet, cut side down, and roast for 45-60 minutes or until tender.

3. While the squash is roasting use the reminder of the garlic infused olive oil, salt and pepper and cook the chicken breasts in a medium sized pan over medium heat until cooked through. Cut into bite sized pieces and set aside.

4. Grab your baking or casserole dish and scoop the cooked spaghetti squash into the dish. Add the grilled chicken and mix with oregano and basil.

5. Top with marinera sauce and cheese. Bake for 20-30 minutes or until hot and bubbling and the cheese is melted.
